kaboob automatically mauls and dominates anyone.

Shammy is the most underrated and underappreciated fighter of all time. Dude was a legit bad ass. Sure, he spent his prime in WWF, and the game had passed him by when he returned, but he was still an all time great. Did himself no favors with a few sketchy performances/dives when he was past it, but he's not the joke a lot of MMA fans make him out to be.
I didn't assume anything other than they are who they are and they know what they know. Shamrock can have all of his accumulated knowledge to date and he is still easy work for Khabib. If you think they are anywhere near the same level you are kidding yourself. You're conflating the 1993 Shamrock (with 1 year of Pancrase and zero knowledge of BJJ) with the 1995-97 Shamrock who evolved quite a bit. Sure, he didn't have the knowledge of an elite 2018 grappler, but at least he had a working knowledge of BJJ submissions and how to defend them. He'd also trained extensively with Oleg Taktarov by that time. Oleg was one of the best submission specialist of that era.
Again, though, there are so many unknown assumptions that you can't seriously analyze these fights. Do we assume Khabib has full knowledge of every early Shamrock fight while Ken has zero knowledge of Khabib's skillset? That's certainly not fair or realistic in any way.

The only thing Ken has is size. He was never a great fighter. He was good at slapping and submitting people in Pancrase. He doesn't have shit for Khabib.
Khabib smashes.
Shamrock bottles up and quits.
I'm not sure brother - what are his two best wins? Maybe Bas Rutten and Dan Severn?
He has a very sketchy resume with very few legit wins and lost to almost every legit fighter he faced.
Back in 1994-1996, Oleg, Kimo, Severn and Bas were all legitimate competition. I know they weren't as impressive as beating real HWs like Michael Johnson and Conor at 155, but they were solid fighters in that era nonetheless.
Bias against shamrock? Sure. I'm bias in the sense that I'm realistic about the fact I recognize he was a 50/50 fighter against the other best fighters of his day and his skills are rudimentary against fighters of today. You've simply asserted your bias. Shamrock was the best fighter in the world in 1995 when he submitted Severn. You haven't explained how Khabib can beat a pretty good wrestler with good submissions who would have a good 40-50 pounds on him. Shamrock takes him down and holds him there and wins a UD.
