Its tough to become champ when Jones is champ so lets say he operates better. Lets say if he is a top 3 LHW since I feel Gus would probably beat him too.
He's going to operate better.
Better endurance, quicker, stronger, and better chin. (Take into account the damage he's already taken.)
That is if he doesn't try to add too much weight to his frame.
That's scientifically incorrect.Seems like 195 would be his optimal fighting weight. He should do fine at 205, but extra weight won't give him a chin and he certainly won't be beating the juicehead.

Fighting at a higher weight improves your chin. This is because cutting too much weight drains water from the meninges, the layers cushioning your brain in your skull. Dehydrating this cushion makes you more susceptible to being KO'd and getting brain damage. When you rehydrate without IV rehydration, that spongy brain layer doesn't rehydrate fast enough.
By cutting a lower % bodyweight at 205, Rockhold should have a much better chin. Now, he's still gonna get tagged if he hangs his chin high in the air with his hands down, but he's not as likely to get KO'd.
