Pickled vegetables

    What is your take on pickling vegetables. I live with my parents and they grow their own vegetables so it has been good enjoying that over the summer. But as I'm off back to uni I will have to turn once again to supermarket vegetables.

    Now, I can pickle a lot of vegetables in vinegar like beetroot and onions and so on so forth to extent their life. Will that provide the same level of nutrition.

    Look into lacto-fermentation.

    make a vegatable smoothie with vinegar as the base , although they are quite sickly

    I need some more help here, I looked into lacto fermentation and all I could find were dodgy articles written by strange men.
