The Korean language palatalizes the /s/ sound in front of the /i/ sound, making it sound like an "sh", so it would be written in Hangul as 시유순 and would be pronouned "She you soon." Additionally there is no surname of "see/she" or "soon". There is "sun" though (pronounced with an "uh" sound).
As an aside, I have had students with the name "유석동" or "Yu Seok Dong" which is pronounced "You suck dong."

I'm actually aware of that. My mom's native Korean, and I studied it in college for a few semesters.
