Options from North/South

As a little basics for this I am new to grappling/MMA training in general but given my size I have about, ONE person I can roll comfortably with without worrying about hurting them. This guy is a Tae Kwon Do Blackbelt and is a 2 year student in the Muay Thai class we have and has been going to MMA for around a year. SO, he has more experience than my 4 months of MMA class.

However, whenever we roll I always end up on top in North/South at some point. Outside of the North/South choke which I have NO idea how to do what options are there other than transitioning to mouth or side control or even possibly the Salaverry/Mounted Crucifix?
 
Kimuras and Armbars all day from here. I find the north south is easier to set up from side control anyway.
 
Is it the kiumra where you kinda sit up on your knee with one leg over their head almost?
 
On the N/S choke:

Chin tuckers. What do you do with those guys?

(My girlfriend tucks her chin just because she knows I get no satisfaction from jaw-crush-taps, and she can't help but emasculate me whenever she can)

Chin tucking isn't the smartest defense, but this should help
 
In my opinion most of the time you are setting things up from sidecontrol then transitioning to north/south midway.
 
Apart from the North South choke (which is tricky and takes time to learn, but can be very high percentage once you get it down), the North South Kimura is extremely effective. Extend your arms to make it a very strong control position, then pursue the Kimura or use the position to transition into other things like the armbar, seatbelt, Ezekiel, back to the North-South choke etc.

Another cool option from NS is the 'Alliance' shoulder lock, basically an Americana with a heel hook grip on the elbow. I suck at this, and have only hit it twice or so in sparring, but I've been meaning to add it to my arsenal, as I often find myself controlling the near elbow and in perfect position for it. Tarsis Humphreys is awesome at this.
 
Kimura, armbar or my favourite, D'arce choke. Sometimes I've finished with kneebars when he/she starts raising his/her legs towards me.

My instructor is slick with kimuras, but for some reason, I'm terrible at finishing them. Since we drill them so often, I figured I'd use that mat time for another attack and have started using it for taking the back.

Same as myself there. Terrible at finishing them but they are awesome for taking the back.
