opinion on Horsemeat and Liver?

I just found a specialized horsemeat shop and I am thinking on going full Overeem. anyone has experience with it? which cut is the best one, if what you want is cheap lean, high protein meat?

plus, your opinion on beef liver? I find it very cheap everywhere and everything I've read about it indicates it's pretty good nutritionally. am I wrong? the taste is a bit strong but I think I can get used to it, adding some onion and spices.
 
Love liver and have read nothing but good things about it. Its somewhat high fat content is probably the only downside.

Sautee it with some onion, garlic and maybe a diced up tomato in there to thicken up the juice. Delish.

Liver is highly saturated with blood and some glycogen since the liver is harvested and frozen quicker than muscle tissue during butchery, it doesn't get as long of a chance for bacteria etc to oxidize it like it would with muscle tissue that is hung with cheese cloth.
 
I wish i was a fan of liver but unfortunately the taste it just too strong for me. Personally i perfer beef heart. The macros are probably the best i have seen and it is loaded with micro nutrients and also its more of a muscle than an organ so it kinda tastes like meat and can be eaten medium rare. Try it sometime you will like it.

If you think Overeem was that big because of horse meat, you are mistaken.
Steroids dude.
And about horse meat, i have tried it , its really strong and in my opinion tasty :)

Liver is really healthy. Full of b vitamins and iron in levels you cant get from other meat sources. I try to eat it a couple of times a week. Don't over cook it though as it becomes tough and you lose a lot of its nutritional value
