This Chinese man found a dog in the bathroom, thought it was a stray and ate it. He was arrested and later released on bail.

In China and most of USA it is legal to eat dog. Strays are caught and eaten often in mainland, so why should he have gone to jail if there was no collar on the dog? How do they perceive the value of this dog as higher than any other dog? I think it is because the color of it's fur. Let's remember, black dog lives matter.

Why is the consumption of dog considered taboo here in the states? How is it possible to feel empathy towards a dog and not a cow or a pig?

Yahh they have none of that for any living being, even humans. Culturally they are quite interesting in their differences, and what to a westerner is greatly rude is just normal to them.

Yes, but from what I found from asking people while living in China, they don't do it for the jail time, they are more worried about having to pay the family or the person hit a large sum of money.

The reason they reverse to finish you off does have to do with the money. If you outright kill a person the money you have to pay their family isn't nearly as much as the money you have to pay for crippling someone for life.

There is also a bit of dishonor for forcing a family to take care of a cripple for the rest of their life. All in all if you seriously injure someone its better for you and their family if you finish them off.

Though this attitude has resulted in some downright hilarious videos and stories where someone barely gets injured and then gets hit again and can be seen clinging to the hood of a car as the driver speeds along trying to throw them off the car then run them over again.
