I've used Bovada for years (well back when it was Bodog). Never had a problem with payouts. A few other sites that i've heard are good too, but i've only used that one.

Edit - to further answer the question, you can do direct deposit or wire transfer (although there is a certain amount to cash out before this method), or check (they also give out a tracking number as well)
