Looking for International (read: outside of the US) Recipes, with appetizer, main course and dessert

I'm celebrating in the very near future, and I'd like to ask you guys if you had any recipes from a specific country, region, culture, or something else.

I can easily google plenty of ideas, but I'm looking for some deeper cuts you might have. An old family recipe, something off the beaten path, you know.

An event from the past, for instance, was Caribbean themed and had:

Chips and Mango Salsa

For the salsa:
1 Firm but ripened mango
1/2 Red Onion
A drizzle of Honey
1 Lime (Zested and Juiced)
2 Stalks of Cilantro or 1 Tablespoon of Chopped Cilantro
1 Sweet Seasoning Pepper
Salt and Pepper to Taste



Meat Pates

For the pastry:
Flour, 4 cups
Unsalted butter, 4 tbs
Salt, 1/2 tsp
2 t Baking powder
1 tsp sugar
Water, 1 cup*

For the filling:
Lean ground beef, 1 lb
Sweet green pepper (finely chopped), 1
Onion (finely chopped), 1
Celery stalk (finely chopped), 1
Parsley (minced), 1 tbs
Butter, 2 tbs
Garlic clove (minced), 1
Hot pepper (finely chopped), 1
Tomato paste, 1/4 cup
Oregano, 1/4 tsp



Vienna Cake

For the cake:
1 cup unsalted butter, softened
2 cups sugar
4 large eggs, room temperature
1 1⁄2 cups self rising flour
1 1⁄4 cups all-purpose flour
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla extract
food coloring, red,yellow,and green
apricot jam or strawberry jam

For the frosting:
2 (8 ounce) packages cream cheese, slightly softened and cut into small pieces
1⁄2 cup unsalted butter, softened and cut into small pieces
1 1⁄2 teaspoons vanilla extract
5 cups sifted confectioners' sugar
 
FOR THE SPATZEL

Ingredients

  • 4 eggs
  • 1/3 cup milk
  • 2 teaspoons salt
  • 2 cups all-purpose flour
  • 4 Tablespoons unsalted butter
  • 1 teaspoon white pepper
  • 1/4 teaspoon nutmeg
Instructions

  1. In a medium bowl, whisk together the eggs, milk, and salt. Add in the flour and stir until well combined.
  2. Bring a large pot of salted water to a boil over high heat. Place your spaetzle maker over the top, then pour half of the batter into the cup of the device. Quickly slide the cup back and forth to allow the batter to drop through. Repeat with second half of batter, working quickly, until all the batter is cooking in the pot.
  3. Set the spaetzle maker aside and give the dumplings a good stir in the pot. Let them cook for 1 to 2 minutes, until floating on the surface. Remove with a slotted spoon and place in a large bowl. Toss with butter and spices. Serve warm.


Käsespätzle with Caramelized Onions – The Ultimate Mac & Cheese

German käsespätzle also known as cheese spaetzle, is an easy to make noodle dish loaded with Emmental Cheese. Basically a fancy Mac & Cheese!

Ingredients
  • 1 batch of homemade German spaetzle or a package of store bought ones
  • 1 cup of caramelized onions as described above
  • 4 oz shredded Emmental Cheese
  • 1/2 cup bread crumbs
  • 1 tbsp butter or oil
  • Herbs to garnish optional
Instructions
  1. Cook the spaetzle as indicated in the recipe, or on the package and pre-heat your oven to 375F.
  2. In a pan with butter, fry the cooked spaetzle noodles until lightly golden brown.
  3. Mix the fried spaetzle with the caramelized onion and half the Emmental cheese. Portion into two casserole dishes and top with remaining Emmental cheese and bread crumbs.
  4. Bake the käsespätzle for 10 minutes or until the cheese has melted on top.
  5. Garnish with fresh chopped herbs such as parsley and serve!
Recipe Notes
The cooking times do not include the time required to caramelize the onions, or to make spaetzle from scratch. It only accounts for the assembly and baking of the käsespätzle casserole.
 
Those little meat pies look nice.
How about a Cuban pork shoulder or pig buried in smoldering hardwood charcoal. Maybe too close to carribean
App.. Minced bacon and porkfat and carmelized onion spread and some breads..
Mexican flans with freshberries.

BACON WRAPPED SCALLOPS WITH MAPLE GLAZE


Ingredients:

1: Jumbo Scallops (16)2 lbs.

2: Oscar Mayer Hardwood Smoked Bacon

3: Aunt Jemima Original Maple Syrup




Directions:

1. Cut jumbo scallops in half. Wrap each scallop completely with bacon.

2. Bake at 420 degrees in a preheated oven in a glass Pyrex tray on the lower shelf. Approximately 15 to 20 minutes until bacon is brown and cooked.

3. Four minutes before completion, pull scallops out of the oven and completely glaze them with the maple syrup.

4. Put them back in the oven on broil on the lower shelf. Brown until desired.
