Where were you in Ghana? I stayed in Accra for a month and I never saw theseGrasscutters, aka Cane Rats. Not really a fan, but its not terrible. They eat that all over western Africa. I had it from a street vendor in Ghana. It's supposedly very healthy. High in protein, low in fat. They grow quickly and are pretty durable animals, so they are farmed.
