The best way to not get kicked is to merely step backward or to the side as your opponent comes in on you, but yes, the most common way to check kicks is to simply raise your leg and make their kick connect with your shin. This is a kickboxing technique not often seen in MMA, which is weird because if a guy kicks hard and connects with your shin badly, he will break his foot... which is exactly what happened to Aldo in his fight against the Korean Zombie, in fact.Is there a certain way to check leg kicks (foot or shin)?
However, you can also raise it very slightly so that they kick the point of your knee, which allowed the always wily Ernesto Hoost to break Ray Sefo's shin and claim his fourth K-1 Grand Prix belt :icon_twis
It should be noted that becoming overly enthusiastic towards defending low kicks can leave one vulnerable though, as you have to stand on one leg and temporarily be incapable of doing anything other than defend. As an example, K-1 legend Jerome Le Banner once used the threat of his right low kick (which he established throughout their bout) to draw kyokushin karate master Francisco Filho into checking, with a feint... only to then bomb him into unconsciousness with a MASSIVE straight left hand.
