I have a good Jamabalaya recipe. pretty healthy except for the amounts of salt... which you could cut out by using organic crushed tomatoes or everything fresh. 1.25 pound Chicken breasts -- boneless (cut in 1" cubes 1 pound Jimmy dean Hot breakfast sausge. 1.25 (41-50) pound Shrimp -- cooked 28 ounces Crushed tomatoes 1 md Onion -- chopped 1 Green pepper -- chopped 1 cup Chicken broth 1/2 cup White wine 2 teaspoons Oregano 2 teaspoons Parsley 2 teaspoons Tonys Cajun seasoning 1 teaspoon Cayenne pepper 1 Habenero Pepper UNCUT (place it in crockpot remove before eating) 2 cups Rice -- cooked Brown breakfast sausge in pan (set a side) Cut chicken and slice sausage. Chop onion and green pepper. Put all in crockpot. Add remaining ingredients, except shrimp and rice. Place Habenero at very top (so i can be easily removed before eating) Cook in crockpot on low for 6-8 hours. 30 minutes before eating, add cooked shrimp ; allow to heat. Pour over cooked rice. U can also use smoked sausge for a more classic jamabalaya. Or for healthy alternative leave the sausage out completely. and replace with more shrimp and chicken This is bar none the best jambalaya i have ever tasted... Ive made it for a number of buisiness ocasions and famiyl get togethers... everyone LOVES it. I just made it again this morning and thought i would share. If anyone gets a chance to make it let me know what you think.
Forgot to put on there to brown the breakfast sausage in the pan, other wise you will get big lumps of bolied sausge in your jambalaya and you dont want that. Im from Florida.
