Think about it. They can observe all fighters’ training methods and build a vault of all the fighters’ best secret training methods. Then only UFC fighters have access to this. In a more Machiavellian way, they can even give hints to the fighters they want to win based on what they observe the other guy training, all without either party knowing.
They can also use the above data to matchmake in ways where they are much more certain of the outcome of a fight.
The same thing can be said for nutrition. They can gather a huge vault of data on fighter physiology. The more data they have, the more everyone has to rely on them for nutrition to be on par with everyone else. The more they have to rely on them, the more data they have. It’s like the Facebook model of fighter nutrition.
