Boiled beef tastes great. You just need the right cut, long boil time and right veggies/spices. Taffelspitz is one of my fave dishes.

The thing is, boiled beef is widely thought of as tasteless, which is completely not true when cooked properly.

Ive a genuine fondness for hatch green chiles. They're so versatile. Excellent in sausages and corn bread. They keep sausages so moist. I've an irrational hatred of cakey sausage fillings.

Ive been experimenting with Peruvian green sauce(aji?) recipes. I've not got it down yet, mine have too much cheese in making it too creamy.

Argentinean empanadas speak to me. They're a massive upgrade on the meat or cheese and onion cornish pasties i loved from back home.

Hatch chile is the best and if you figure out the recipe for Peruvian Green Sauce and share it with me I'll be forever in your debt
