How many of Khabibs takedowns will Conor stuff?

If Khabib closes the distance and chains, then not a lot will be stuffed.

If Conor can pre-emptively stop Khabib from closing in the distance with his frame, that is another story.

Straight up stuffing takedowns with underhooks is stupid against Khabib, but Conor knows that and he also happens to be the master at range management and framing.

Conor might stuff the first couple takedowns, but I suspect that Khabib will land and fully secure a takedown within the first 3 minutes. The rest of the round will be a mauling. The takedown will come much easier in the second round. And Khabib will finish Conor by the end of the fourth round.

On the other hand, it wouldn't surprise me if Conor starched Khabib in the first 3 minutes of the fight.

For me, these are the only plausible outcomes.
