I like mine baked with sour cream and chives.

I usually make them in accordance to the rest of the meal. It's kind of what makes potatoes so great. I don't really have a favourite as they're good in nearly any fashion.

 

Diced with skin on, then lightly boiled, then lightly pan-fried, and coarsely mashed with a bit of fresh cracked pepper, fresh green onion, and goat-cheese feta. Prefer yams to potatoes.
