Gutting and rehabbing an old historical building - any experience?

Try to get on one of those home improvement tv shows. The producers would eat up your story, it's really marketable.

Around 15 of my colleagues has this as their job description, maintaining, rehabbing and buildings from the 13th, 16th, 18th and 19th century. Unfortunately, I'm not one of them, and I don't really know enough about it to be able to give any general advice, especially considering regulations will differ from nation to nation. I wish you luck, though. I love that people are willing to do this kind of stuff.

Out of curiousity, how old is the building? Is it considered historical due to age alone, due to it's uniqueness, or due to it being representative of a certain style or era?
