At UFC 68 Jason Lambert Koed Babalu. I believe Sobral was around -450 and Lambert around +400.. .This was also Lamberts last win the UFC

Overshadowed understandably by the epic upset by Randy Couture over Tim Sylvia for the UFC HW Championship.

No one forgets the fight, but I think most forget or never knew that Frankie Edgar was a 3-1 underdog in the second BJ Penn fight (source).
 
According to Tapology, RDA was +400 when he beat the crap out of Pettis. Now it seems like a normal and expected victory, but damn...

poirier (+285) had a huge upset over josh grispi (-365), at a time when grispi was riding a 10-fight win streak and the #1 contender for aldo's first ufc title defense. and it was a short notice fight, too.

dunno if that qualifies as great, but it was kinda surprising
 
Randy beating vitor the first fight was a huge upset at the time.
Vitor looked like a steroid science experiment for that fight. His piss would have melted thru USADA'S plastic cup.

Not exactly a "huge" upset. But at UFC 84 Wilson Gouveia was riding a 4 fight win streak in the UFC and this was Goran Reljic's UFC debut. Reljic was able to finish Wilson. (Video below is timestamped for your viewing pleasure)


 
Brian Bowles vs Miguel Torres - Huge upset win from Bowles who had only 7 pro fights coming into the bout while Torres was 37-1 and basically the leader of the manlets

Urijah Faber vs Mike Brown 1 - Urijah was supposed to obliterate Brown. Did not go that way in that fight or the rematch (Faber basically left the division after this).

Sokoudjou vs Rogerio Nogueira - RTS was making his Pride debut and had only 3 fights, while Nogueira was a household name in Japan and was expected to make easy work of RTS. Got knocked out in 23 seconds instead
 
There have been a few late career comebacks that led to great upsets. Mike Pyle, Lawler, Yves Edwards...shit even Jamie Varner (vs Edwin Barboza)
 
Randleman over Cro Cop but that was only an upset because people are idiots
 
definitely qualifies. Good example..This was the card with Pat Barry vs Kongo...
UFC Live 4 - Kongo vs. Barry... unfortunately after this Brenneman ran into a monster named Rumble.
