Okay got my first Amatuer Kickboxing fight coming up in November and I just found out about it yesterday, and I usually can only make it to my Kickboxing gym 3 days a week and thats not enough so anyone got any advice on what should I be doing while im not at the gym and should I diet?

I would be interested to know too, as i am in exactly the same boat (more or less).

Is your fight at the beginning or end of November? I guess that would be useful for future posters.

shadow boxing, conditioning, heavy bag work if you can. Do a lot of plyo. Take what you have learned that week at the gym and drill it over and over in your free time.

In regards to diet, what weight are you fighting at and how far above that weight are you? That will determine how much you have to diet.

do plenty of road work, all the road roadwork you can handle.
but being able to run far does not really mean you can fight 3 rounds.

you need to do loads of sprint work, this will prevent any build up of lactic acid during the fight that will sap your strength and force you to spend an 1hour vomiting after the fight.

90% of people underestimate the fitness needed to go 3 rounds,it's not like sparring.
make sure you are one of the rare few who enters the ring in your first fight prepared.

Do you only workout sprints? Or do you also mix it up with long distance?

mix it up, i do sprints after long distance.
do it until you can do no more

while you're here, i'll just ask one more thing (sorry for thread hijack). What would you do against an opponent that really likes low kick? I spar with a guy bout 35 pounds heavier than me, and he do low kicks 90% of the time, very rarely middle kick, and they hurt like hell  Then he just waits for my middle kicks to catch them and sweep me to the floor. What would be your strategy against a boxer + low kicker?

just check his kicks and return a few leg kicks of your own.
get in close past the kicking range, and work your hands.
clinch if it doesn't work,if your clinch skills are good fight the whole fight that way.
if he is throwing to many leg kicks he will be very predictable, time the teep and catch him when he raises his foot to kick and sit him on his ass.
circle him and give plenty of movement, don't give a solid leg kicker a stationary target.
