Try to get at least 600 (700 max) carbs for a few days before the fight. At this point glycogen saturation occurs, meaning you'll prime your muscles with the most energy possible. You can eat pasta, but if you do, make sure you're eating another meal a couple hours later to stabilize your blood sugar.

Before your fight, 2-4 hours before, you should be eating small meals of low-gly carbs. Brown rice and egg whites would be great, as well as bran (All Bran is great) with fruit. You can have some veggies, but I wouldn't kill it, because you don't want your digestive system working too hard when you fight.

I eat breakfast (museli) at 8am and rice, pasta and chicken/turkey at 1-2pm. Thats if I weigh in at 4-5pm.
Usually I wouldn't fight until 7-10pm, so thats about 5 (max 8) hours digestion from the last meal to fighting.
I sip small amounts of water from friday night (8pm) till after I weigh in at 4 and that helps keep the weight off for me.
After I weigh in, I sip a litre of 50:50 apple juice and water to help rehydrate me
