Dunno - eat a ton of veggies for 2 or 3 days like the OP and report back as to the color change.

Maybe you can devise some kind of color scale based on food types.

I'm sure this information is valuable to everyone the planet, as the "why is my crap color X?" mystery will be solved.

I'll try. What type of veggies you guys recommend? And what dressing?
 
As far as dressing goes, you can't beat good old oil and vinegar. Use extra virgin olive oil, and balsamic vinegar. Fire on a little pepper and Lawry's seasoning salt... BAM - you've kicked it up a notch.
