I thought maybe they were too slippery live, but in the video (http://www.mma-core.com/videos/Nate_Diaz_Corner_Audio_Round_2_UFC_196/10123864) with the corner audio it looks like Nate is just in complete control and wanted to put that stamp on it. Conor stops fighting and looks ready to tap, but as soon as Nate gets the opportunity to take mount he let's it go.

Another savage move by a straight up Ninja, reminds me of BJ Penn vs Pulver.
 
Look at Luke Thomas' breakdown of the fight. Position over submission. He lost the submission but was able to control Conor and get into dominant positions.
 
It was to stop Conor from completing the roll and leave him in an advantageous position to pass.
 
The position was lost, he moved to a better position and finished the fight.

I think he was too slippery to risk it so he just went for a better position.
 
Nate also gave up the arm he had isolated... he could have snapped that motherfucker off... would have been delicious
