Before you leave the "gym", roll with him one more time. When he grabs the foot start wailing shots at his head and say dude you shouldn't leave your head out there like that and walk away.

Does your town have a wrestling club or something ? 120 miles is a long way to drive to get decent instruction with the price of gas these days, you would probably just be better off learning some other facet of grappling for the time being since your only option is a bullshit gym with loser training partners.

Or judo club maybe? If there is a YMCA or YWCA there is a good chance that it has a Judo class.
 
One of the major issues is the techniques, I feel that a coach should bascally teach you a basic game, or way/theory behind each position what you should do defensively and your plans of attack and how your going to move to the next position. He does not do this.

Yes, if not a basic game, then at least general concepts and strategy for different positions. Your game is your own to develop, but a good instructor will guide you.
