Conor decided to pursue a fight outside MMA; he saw a greater challenge in boxing with a higher purse win-or-lose and before he left mentioned that Khabib is injury prone and pulls out of fights too often.

Imagine if Conor had taken yet another short-notice fight? Those fights are meaningless.
If he loses he will get a rematch, if he wins people say the win doesn't count (Mendes) and that he should rematch the guy. Either way nothing is settled.
It makes sense he didn't want to bother having to deal with this nonsense yet again
