Owwww. I believe lateral knee bars aren't allowed (correct me if I'm wrong, but I saw Minowaman do it in another org and heard it was illegal in response), so I feel like this is pretty bad too and shouldn't be allowed. So difficult to defend, to referee/judge... What do you do?

You obviously don't know what you're talking about. Submissions on the knee are safer. Pressure builds up and you have time to tap. With a strike, damage is done, and pain fades after the strike until it come again. And you're limping around, making it harder and harder to block.They're not as dangerous as everybody sensationalizes them to be. Now heelhooks, there's a knee killer, yet nobody seems to care.

I read it was a Savate technique. I'm sure they developed a good defense for it.
So does getting punched in the head.They probably never will end an MMA fight.. but they could definitely end up shortening someone's career since knees wear out easily and are nearly impossible to restore to 100%

The one guy who really bitches about them (hint: My username) is completely at fault for being eaten up by them because for the majority of his post-UFC title run he has been a flat footed plodder with terrible movement. Nate is the same way. When you just move forward flat footed you are begging for your lead leg to be attacked and this is a legitimate strike. Don't like your opponent oblique kicking you? use better movement and be lighter on your feet. Standing heavy on your lead leg is begging for it to get destroyed by an oblique kick.They are all right with me. Should learn to deal with them,just as with anything else.
