I know it is not the best thing to do - nowadays, fighters train in MMA from childhood and they are well-rounded. And the time of specialists has passed. Lyoto, Maia, Werdum era is pretty gone.

But there are some exceptions and UFC should target those.

BJJ champs? Sambo champs? Greco-roman ? Karate? Kung-Fu? Muay thai?
 
They already do, including some A level athletes

Not until they start paying more. It's not exactly a mystery why you're not seeing many American wrestlers going into mma full time. The market is way oversaturated and even "successful" fighters aren't making great money (especially considering it's not a long term career with major health risks).

We are certainly not seeing the "best of the best" anymore

UFC needs to get with the mainstream and do a show like "The Voice". The "judges" (fighters) watch you shadow box behind a curtain on a monitor. If the pick you, their chair turns and you gotta fight him....or get to train with them.

Make someone a household name like Season 7's AGT winner(s)

from other fighting disciplines, obviously. from other sports, only the burnouts, like schaub and hardy. they're going to go for the bigger easier money first.
 
When someone like Robert Drysdale or Raymond Daniels enter MMA, its shocking how MMA fans turn up their noses.
 
Well Endeavor owns the WWE now, so expect some other Pro Wrestlers to be trying out the UFC.

They could but they prefer to ignore the best fighters and settle for cheap stand and bang bar fights.

Bo's best wins were in freestyle and his biggest accomplishment was the U23 Worlds Gold....much more difficult to accomplish than a D1 title.

Anyways they signed Rinya Nakamura equally as decorated of a wrestler as Bo
