Punk vs Gall - 13 years, not very competitive.
Gabi vs Japanese grandma - 19 years, not very competitive.
Williams vs Brewboker - 31 years - not in the UFC.
Severn vs Fraser - 29 years, not in the UFC.
Coleman vs Shogun - 17 years, fairly competitive.
Erikson vs Herring - 13 years, probably competitive but I dont remember.
Erikson vs Bigfoot - 15 years, probably not competitive but I didnt see the fight.
Romero vs Whitaker - 13 years, very close fight for the UFC belt.
Hunt vs Blaydes - 16 years, kinda competitive.

We just had one recently. Mark Hunt (43) vs Curtis Blaydes (26).

Old Hunt dropped him and had him stumbling. I thought for sure it was over, but Blaydes recovered and controlled Mark on the mat the rest of the fight.

17 years difference and pretty competitive.

And Randy Couture(44) ragdolling 28 year old Gonzaga was super impressive
