I listened to Luke Thomas talk about grappling with people, and he asked DC if he could try some random wrestling positions (no homo), and he said he's never felt anyone be that solid, like as if he was made from stone.

Hendo is maybe an example of a fighter who despite serious wrestling credentials seems to have pretty sub-par balance.

I think a tangible aspect of 'low center of gravity', is flexibility. That is, being able to lower your center of gravity when parts of you are being picked up. BJ Penn was the meister of this and Hendo is probably the least flexible guy in MMA.
