It's impossible to know without the person's family history.
A person's mother has to be Jewish for them to be considered ethnically Jewish. But children usually take their father's surname.

So in a case like Kaufman, we would need to know her mother's history.

And even a name can be meaningless. For example, Whoopi Goldberg is not Jewish.

The question of a single n or a double nn can suggest things, but these names were often altered by immigration officials who were in a rush.
Like when Vito Andolini became Vito Corleone. That scene was realistic and names were altered very often.
