Obviously you dont see guys submit in the middle of a fight or in between rounds that often

But how often do you see a guy repeatedly get up and refuse to quit after a beating like the one Junior took last night

Cain gave him several opportunities to end the fight, he could have stayed mounted and get pounded out, he could have just turtled up and waited for the ref to stop it or he could have allowed the armbar to happen, but he didn't.

plenty of people quit in a fight, i really dont want to sound like im bashing but look at bj penns last 2 fights. jds shows that he has heart, to take that beating and refuse to curl up and let the ref stop it shows how great he is. he will be champion again

Getting subbed is different. You have been beaten by superior technique. Dropping to your knees and wanting the fight stopped when your not knocked out is a different situation. Nobody looks on getting subbed as giving up.

Plus quitting implies something entirely different to submitting

By virtue of the fact that you did get up, it means that you could / were physically capable. The quote would more accurately stated as...

"A champion is someone who gets up, even when it is hard to do so."

Its an inspirational quote not a computer generated factoid. The meaning you are supposed to infer is that even when it seems to you that it's impossible, which happens when you break mentally, you find it within yourself to keep going. A lot of fighters and athletes in general would be familiar with that moment.
