Let's say the UFC are obligated to offer 3 fights a year, and in the second fight the fighter gets KO'd cold, can the UFC offer the third fight scheduled let's say 1 week after that and then cut them for not honouring the contract, or do fighters simply have to wait until next year?

Basically wondering if there's a certain amount of time a fighter has a right to recover/prepare during.

The athletic commission wouldn't allow a ko'd fighter fight within a week. It also sets a required time of no contact or training depending on the severity of the injury

UFC has to offer whatever is written in the contract, not necessarily 3 fights a year. Depends on case by case. Also, usually there are provisions that allow contract to be extended time length wise in case there are injuries or such inabilities from the fighter to accept offered fights, otherwise it would be extremely unfair to the UFC and impossible for them to meet the contact stipulations.

This. So the UFC would have to wait until the "Suspension" period finishes. The Athletic commision usually says x fighter is suspended for x days with no contact / training etc until can pass medical examinations etc.

The UFC only has to offer a fighter 3 fights a year on most contracts, the fighter can refuse the offered fight for what ever reason if healthy. Ie waiting for a title shot and not risking loosing to another fighter and possibly miss out on getting a title shot if they lost etc etc

There is also the Champion Clause on Title Fights. Usually whom ever holds the belt has to keep fighting even if on there last fight they finished there contracted fights.
It's usually in the fight contract that if x person wins the Belt it ads +1 fights to there contract. So the person has to relinquish the belt and Retire. And due to the +1 fight clause if Dana has a hate boner for the person he can keep them on that technically "owed" fight and stop them from signing with another mma / boxing etc etc.

They're contracts are pretty Iron Clad and are very well worded written and it would be hard to fight in court and the UFC (Dana) would be petty and just draw the court trial and bleed you dry until you run out of $ until you couldn't fight the court case anymore.
