Chipotle chicken chili. One of my favorite meals to make

I’m gonna take it easy on the booze and weed tonight because I’ve been getting after it hard lately. Maybe a couple of gin and tonics or beers and a little ice cream cake indica
 
I just made some stir fry with grilled chicken breast, broccoli, carrots, and brown rice. It's topped with coconut aminos garlic sauce, stuff is amazing. I'll be having some coconut almonds, and vaping some fine herbs...

I don’t really use recipes. I just make things up as I go but here’s what I typically do. Portioning doesn’t matter too much, just taste it as you go.

Brown a couple of onions and your chicken in a big pot, 4-5 min. Add fresh garlic and cook for 30 more seconds.

Add can of diced tomatoes, a couple of cans of beans, can of corn, a couple of cans of chopped green chilis. Add a cup or two of chicken stock.

Add salt, pepper, chili powder, paprika, and a little bit of cayenne to your liking

Pour in your favorite chipotle hot sauce

a dash of cinnamon and pinch of sugar is really nice in it too. If you have fresh basil chop a few leaves and add.

Simmer and cook it down to your desired thickness. 20-35 min.

stir in 1-2 cups of sour cream. Simmer for 10 more minutes.

Top with some blended Mexican cheeses and sour cream. Serve with chips
