Let’s share some examples where a fighter was nearly finished at the end of a fight and probably would have been finished if there was an extra minute left.

Shogun vs Hendo
Diaz vs McGregor 2
Adesanya vs Blachowicz


any others come to mind?

Not last round...but the most famous is Bisping vs Anderson. Bisping went on to almost finish Silva himself... Right after stepped up and won the real belt from Rockhold and got rewarded the big money fight that he asked for against the GOAT Pierre later that year ...
 
Wanderlei vs Bisping at the end of every round. At the end of round 1 Wanderlei rocks Bisping, at the end of round 2 Wanderlei is choking Bisping at the end of round 3 Wanderlei knocks Bisping down against the cage.

BJ vs. Pulver I. Armbar was locked out and ref made BJ let go as the buzzer sounded. 5 more seconds and BJ would have had the sub instead of losing a 5-round majority decision.

Crazy thing in the rematch was BJ had Pulver in locked subs several times but seemed to let go on purpose just to prolong the fight and show that Pulver was his bitch.
