Has to be within a reasonable timeframe, so fighters retiring and then coming back several years later don't count.
 
Well, Johnny Trimoune is surely one of them
 
Brandon Vera was the next big thing after he smoked Mir at UFC 65. He was undefeated and his hype so high people legit were saying he could hold HW and LWH belts at the same time. Then he got smoked by TIMMEHHHHHH and beat up again by Werdum...

I bought into the hype tbh. Guy looked electric.

That dude was another one of those "next biggest things" after the way he destroyed Petruzelli. Then, he lost his next fight in a very boring way, and was basically never heard of again. I just looked up his fight finder and he recently was on a 11 fight winstreak, before getting KOed in his last fight. Still, he's 16-2 is his last 18 fights and the guy never got the call again.
