Yes, as many men pay with cash as to not leave a trial that can get them in trouble with the misses at home, or anyone else for that matter. I was thinking that way because of jobs like bartenders and waitresses. They don't get paid very much but the tips they get more than make up for it. My wife is a waitress and her official wage is something like $5.50 but she gets tips and sometimes will come home with $300 just in tips for a days work.

I would strongly advise on her sitting down with her employer and mentioning a tax strategy for the employees. The taxman can fuck them all over really hard if they are all providing different returns and expenditures. Tax agencies have entire divisions committed to hammering bars and restaurants. Once the tax man sniffs out a couple of inconsistency's, they will crack the whole place wide open, with no shits given. They also are ramping up their cyber sleuthing considerably, so what out what you say. These people have lots of power and endless resources to make your life a living hell. I know first hand. Even if you are right, its years of pain. I would equate their power with that of the gestapo. They are the life blood supplier of the government, that being the same one that kill for money and power regularly. One of democracies dirty little secrets.
