Shamrock retired from UFC(not MMA) when he was the champ at 25. However guys who retire early are usually back. Look at GSP.

GSP retired number 1. Although he's coming back so there goes that . Conor may not come back so him.

Only one I can thinik of is Mark Hughes (brother of Matt), although he had a couple more fights outside of the UFC.

Correct answer but not what i was thinking of, it was fairly recently. Young guy had his first fight in UFC and looked fairly impressive, then retired in the post fight interview saying it was his dream to reach the ufc and that he accomplished it of something
EDIT: Frankie Perez. KO'd Sam Stout in his debut in under a minute then retired, after which Bisping trashed him quite a bit
