I remember BJ Penn vs Joe Daddy being brutal....I wanna say the last super bloody fight I saw was Rory vs Lawler?

Cain/Bigfoot initially springs to mind. Remember being pretty concerned for Bigfoot in that fight. Cain was relentless.
