What are some of your go to spices or other special ingredients that you use to kick up the flavor in just about everything you cook?

Semen. Everyone always asks how I make the special sauce. I simply tell them, "it's not hard...anymore."
 
If you've never used Dales get out there and find it. Amazing stuff.

A little thyme in chicken dishes.

Here on the Midwest everybody seems knocked over when I cook fish or seafood and use a little Old Bay
 
I use corriander in pasta sauce and it makes it pretty unique. I use Herbes De Province in a lot of things as well and it makes it pretty good.
 
I recently discovered celery seed and it's an amazing addition to most BBQ rubs. Especially if you're going simple with something like salt, pepper, garlic... add in some celery seed and you'll elevate the ever living hell out of that rub.
