Any of Big Nogs come-from-behind submission in Pride.
 
Two highly significant and underappreciated HW submissions:

Josh Barnett takes Arlovski's sub virginity at FN 93, 3/9/16 - still his only sub loss in 43 fights. He set it up with a beautiful kimura roll as well.

Travis Browne gets constricted and retired - his only sub loss in a 26 fight career. UFC 213, 8/7/17
 
Came here to add my vote to Mir vs Nog. The shock factor of people saying Mir didn't want to go to ground before this fight, watching Mir almost get KO'd by Nog, and then how Mir in a zombie state transitions from a bad position into winning the fight.

I just can't think of another HW submission as dramatic and memorable as this one. It's awesome because everyone on sherdog was basically saying Mir was a poor man's Nog.
 
My 2nd favourite one:

antonio rodrigo nogueira vs achmed labasanov

I jus´love this sequence, beautiful...hardcore fans should watch it, 2mns fight, high level grappling, with a game Achmed, RTT.

 
UFC 165, 21/9/13 - Brendan Schaub puts Matt Mitrione out cold with a D'arce choke, afaik still the only D'arce finish in HW history.
