The dude is a bonafide BBQ demigod and he does a good job of explaining his process and WHY he does the things he does. Just about any BBQ food out there he has a great recipe and he's very easy going about it with tons of "use your favorite _______", rather than "use only this specific thing."

Bro, Ceviche is amazing. Whenever we eat, we drink the leche de tigre afterwards, that fish infused white lemon juice is delicious. Putting rum there is a great idea.
What they did is not really for drinking, you chew that, you don't swallow the fish.
I seriously recommend Ceviche for anyone.

This is much more about competition BBQ and Harry Soo is one of the best BBQ competition cooks in the country. He does a very good job in his videos showing how and again, just like Malcom Reed, WHY he does the things that he does. Great videos, in depth, easy to understand, and very relevant to the current competition BBQ scene.

I love Ceviche but you gotta go to a legit place, someone who knows how to prepare the stuff because if its not prepared right its disgusting its one of those dishes that has to be perfect and just right.
They used to do Ceviche shots all the time at this Mexican or Latin Fushion cabana place they would use beer like modelo and corona it was pretty good you chew it though it gives a good flavor and kick to it.
It’s awesome. It’s perfect food for me, refreshing and healthy.

Harry Soo is legit I ate his BBQ before in Diamond Bar, he cooks and caters out of his home, the man is no joke, he also does teaching BBQ seminars.
He's also a hell of a nice guy. I got a chance to sit down and talk with him for a while at a BBQ conference I went to last year. Super down to Earth kind of guy and he's very intersted in helping others succeed.
