Can someone explain Petrosyans defense? It's not like he's slipping al punches but it's just so hard to hit him, it looks like he's leaning back while the opponent throws a punch
 
He does everything and has a varried defence. What you described is a pull.

He mostly 'pulls' or 'fades' or 'leans', or whatever you want to call it, where punches are concerned. Pretty much the standard form of head movement found in muay thai. He counter punches off his pulls really well, so his opponent's can't just keep swinging after they miss the first punch.

So basically he leans back when he sees the punch coming then counter with a punch so his opponent can't throw the combo?
