Hypertrophy is largely volume-dependent. Single sets are unlikely to work to stimulate growth past the novice stage, and total amount of volume is likely to have to increase over your lifting career.

Maybe 1 set of the same exercise every day, sort of like Bulgarian light?

Anyway, why would you just do 1 set? If you have time constraints, do super sets and giant sets, or add rest-pause training (someone mentioned 20rep squats), or do circuits. Many ways to skin a cat. Otherwise find a normal proven program if you can't make one for yourself, and follow it.
