What do you look for in an instructor when you’re seeking out a new gym to train at?
 
Would you apply the same to boxing?
Why not, its a competitive sport, so validation lies in the competition team. If its a small and new up coming gym, find out about the coach's competition history.

Best case is to visit and feel it out, technically on paper the gym I started with had some red flags in terms of BJJ lineage, but given the number of medals and belts they brought it, it kinda reassured me on that side.

At the end of the day its combat sports, you want to be legit, it has to come from there. If there's no competitive record for students and coach, thats the real red flag, and you'd find another place.
 
The most basic points I would check:

1. Has at least some sort of credentials: diploma, certificate etc.
2. Is physically fit.
3. Can perform all the things he's teaching to others.
4. Competes or used to compete.

I found Judo to be the easiest to verify - since there is essentially one worldwide org and competing is pretty much expected of you.
