One of the important thing newbies tend to forget is that wine aged over 10 years, there is a good chance of cork partially rotting, so one of the best way to take the cork out is with a tool called ahso.
The other thing to watch out for is that the older the wine, the smaller the window to drink once they open, because it takes longer to aerate the wine (waking the win up) at the same time, they fade quicker (fruit and floral characters disappear).
