To be fair, pillows have been used in murder attempts...
 
It has more to do with style than how hard someone could hypothetically punch. Every athletic adult male has the power to knock someone out if they put everything into a punch. But look at fights like RDA/Lawler, you'd think hundreds of punches from a 170lb man would knock someone out, but not when they're being thrown high volume at half-power.

Most fighters that are perceived as having pillow fists are reallyjust fighting in a way which allows them to win through pressure/volume rather than loading up for a big KO (and gassing when they fail)
 
People say Floyd mayweather has pillow hands but he sure has whipped a lot of ass with dem pillers.

Still, hard to say, because itcan be a matter of technique and some guys prefer to play the safer card and not hit like Hendo did (hard, but risky)
 
At HW, kingdom of knockouts, Nogueira and Werdum aren't really known for their power punches.

Cain also was labeled as pillowfisted since he would rely on pressure and volume more than punching power. Specially after the Kongo and Rothwell fights

As far as guys, I think Werdum is a good example of someone who is very big but has bad punching technique-coordination that carries little power.
 
It's really overused to be honest. There is such a thing but it's very rare.

Forrest Griffin comes to mind.
 
Always thought the example was Assunção but he finally finished a fight @ his last outing
