Do you guys have any suggestions whether they're in or out of the box for how to hit the opponent's body with clean knees (all/any kinds of knees) in MMA, so that they aren't deflected by him "parrying" them with forearms and elbows? Both in and out of the clinch, and you are not allowed to knee the head or (edit: ) use elbows.

Very thankful for your ideas!

In the clinch, use leverage. As an example: Right hand under opponents left elbow, step in with lead foot, turn body to your left while lifting opponents elbow and throw knee. Opponents ribs fall right into the knee.

For out of clinch, catch them slippin' basically. Throw knee as they step in to put you in the clinch is the easiest way.

make them respect your hands so you can jab jab and step in knees (while taing an angle in), yo'll be right in clinch range to do your stuff

If they are using their arms/elbows to defend your knees, then use different types of knees. A good one for this type of context is a push knee. I don't know if it has a better name?? Basically you are doing a teep with your knee. This means you pull your knee up outside of the range of their guard and then thrust into their guard. It pins their arms against their body which makes follow-up elbows almost certain to land.

Are you asking how to knee to the body, when the opponent is covering the body with his arms and elbows? o_O

"How to punch someone on the chin when they are blocking the chin?"

Probably not the answer you're looking for(but then again, IMO there's no answer to this question :D ) btu:

Blast away on his guard/arms, or, preferably: Don't knee to the body if he is covering his body. Why would you? You strike on openings, or, blast away with weight behind it so you hurt him anyways + shake him a bit so you get the next strike and/or get the time you need to get out.

and you are not allowed to knee the head or (edit: ) use elbows.

What kind of crazy sport is this? Why would anyone go willingly, through this kind of insanity? It's like pizza without cheese...

In the clinch, basic knees:
-Upwards knees to the solar plexus/collar bone, front thrust knees to the abs. Mixing those two will get you an opening.
-Continue to knee the arms, they will get destroyed.
-Pull him to the side of your rear leg while you knee with a angled knee to the ribs.
-Knee inside the thighs.

Don't let the pressure on his head while you knee.
The hands must push down while you knee. Not before.
Be sure to have broken his posture.
Continuously push/pull. Make him be off balance all the time.
Mix the type of knees, use left/right, so it wont be easy for him to prepare a counter (trip/catch)
Don't take the opportunity, while been in a dominant position, to rest. This isn't grappling. Keep working him.
