not sure if this is what youre looking for, but bisping's record includes wins over legends cung le, dan henderson and anderson silva... but all were past their primes when he fought them.

Win over tiptoe Penn isn't as good as Hughes' win over Penn

There's a chick called Sarah D'alelio. Her record includes a 30-26 UD win against Nunes and a 30-26 UD loss against Rin Nakai.

I'm not quite sure if this in on the OP topic, but I'm also not sure what that is.

So basically it’s a win over a fighter in his prime vs a win over the same fighter past his prime? Plenly of examples.

Jones wins over rampage, Rashad, shogun, and machida were all past their prime and not as good as they look on paper

Machida’s win over Rashad vs pretty much Rashad’s latest losses. Same goes to Liddel’s latest losses.

Rampage and Machida maybe, but Shogun was impressive. He lost a controversial decision to Machida and a ko win in the rematch with alluziv Machida.

Shogun had been through major surgeries at that point and was nowhere near his physical prime

Shogun had major knee surgery (which was at least his third in the last 3 years) after beating Machida and before losing to Jones. Anyone that thinks the Shogun that lost to Jones was "in his prime" is a fool. Jones may have beat a prime fully healthy Shogun, but we don't KNOW that as that's not what happened.
