Strength training is beneficial because you cannot go 100% in sparring/rolling all the time. Judo and grecor roman are great sports to build functional strength but you can't be slamming all your training partners 8 hours a day. Jones is doing full body lifts because no one is going to let him just slam them over and over again during training.
 
Correct lifting in terms of technique and goals will help minimize injuries and strengthens your body.
