For me, the best of the best is Pride FC: Final Conflict 2005.

That's one of the sickest cards ever.

Under card looks better than most ufc numbered events nowadays.
 
I think the best overall UFC event was UFC 199. Had everything from great finishes, great fights, amazing performances and an absolute shocker in the main event. For UFC 189 it was the main card that absolutely rocked it, but with UFC 199 you had entertainment from beginning to the end since it already started with fight of the year candidate Polo Reyes vs Dong Hyun Kim, had three strong KO finishes on the prelims including the crazy Guida vs Ortega fight, two KOs to start the main card, Holloway and Lamas swinging it out at the end of their fight, Cruz completely dominating Faber in a textbook A+ performance to end their feud and as I said the mark out upset of Bisping knocking out Rockhold (even though I was rooting for Luke).
 
UFC 100 was pretty amazing card as well.
 
In terms of fights I would nominate ufc 95. Top to bottom exciting fights and finished
 
Only partially MMA but Metamoris 3 Rolyer Gracie vs. Eddie Bravo 2 was arguably one of the greatest martial arts spectacles of all time. I still watch it on Youtube at least twice a week.
 
KSW 39 in Warsaw, Poland and 50k was watching this on live on stadium
 
Invicta FC 14.

Awesome main event between Evinger and Kianzad, plus Moyle/Jacobson, KGB/Ostovich, Dandois/Megan Anderson, Modafferi/Morais, Aspen Ladd vs Amanda Cooper, as well as the debut of JJ Aldrich and a slightly boring but very competitive clinch fight between DeAnna Bennett and Katja Kakaanpää. One of these cards without a single throwaway fight.
