I'm not sure this is really what you'e asking but I'd love to see Chris Weidman work his way back to champion. His early fights and title win/reign is grossly dismissed by almost everyone. Then be lost a bunch of fights. To see a fighter fall from grace like that, then work his way back to the top would really be something special.
